4 oz. semisweet chocolate, chopped (I use a Ghirardelli bar)
1/2 cup butter
3/4 cup sugar
1/2 cup cocoa powder, plus more for dusting pan (use the dark cocoa powder if you can find it)
3 eggs, beaten
1 teaspoon vanilla extract
Preheat oven to 300 degrees. Grease an 8-inch round cake pan, then dust with cocoa powder.
In the top of a double boiler over lightly simmering water, melt chocolate and butter. Remove from heat, stir in sugar, cocoa powder, eggs and vanilla. Pour into prepared pan.
Bake in preheated oven for 30 minutes. Let cool in pan for 10 minutes and turn out onto a wire rack if desired.
(It’s also fine to serve it right from the pan).
Serve warm topped with whipped cream if desired. Slices can be reheated in the microwave for 10-15 seconds if necessary.
